Creative concept
Twenty-five years of a family firm, marked with one seating rather than a rolling buffet — a deliberately harder choice, and a better room for it.
Six hundred hot covers from a kitchen rated for four hundred, with a 55-metre walk from pass to the furthest table.
Two satellite finishing stations inside the room and a floor team of 84 briefed in table blocks with a staggered release.
First plate down at 20:41, last at 20:52. No course was served over a speech.
