    A chef who cooks the market, not a menu

    Your chef shops at six, decides at seven, and tells you what lunch is at noon.

    Every yacht in the fleet above 62 feet carries a chef. On charter they buy locally each morning — the Marché Provençal, the Bodrum fish market, whatever the caiques landed on Naxos — and build the day around it.

    The tables that are difficult to get

    Two or three evenings ashore, arranged before you arrive.

    Lo Scoglio at Nerano, La Guérite on Sainte-Marguerite, Il Riccio on Capri. Our charter desk books these when your itinerary is confirmed, not when you land.

    The crew go ahead by tender and set a table where there was not one.

    Linen, shade, ice, and a grill if the beach allows it. Works best on Spargi, Curieuse, a Maldivian sandbank, or any Cycladic cove with no road to it.

    A tasting that ends where the vines are

    Grk on Korčula, Assyrtiko on Santorini, Vermentino in Gallura.

    A half day ashore with a grower rather than a sommelier — usually a drive of twenty minutes from the quay, and a case sent back to the boat.

    Compressor, nitrox, two dive tenders and an instructor who plans around the tide.

    ALTAIR and NORTHWIND carry full dive operations. On other yachts we bring a local centre aboard for the days you want. Certification dives can be completed on charter.

    The reef, from the swim platform

    Masks, fins and somebody in the water with you who knows what you are looking at.

    Every yacht carries snorkelling equipment for the full guest complement. Where the marine life justifies a guide — Sainte Anne, Lankan, the Gökova reefs — one comes aboard for the day.

    Carried aboard, launched from the beach club, refuelled by the crew.

    Available on CELESTE, SOLARE, LUMEN, NORTHWIND, ALTAIR and CORVINA. Licences are checked before departure; the bosun briefs everyone on local restrictions.

    Learn to sail her properly

    Helm, trim and navigation, taught by the person who does it for a living.

    On MISTRAL and SERAPHINE the skipper will hand over the wheel and teach — points of sail, sail trim, reefing, coastal navigation. Popular with teenagers and with people who have chartered for years without touching a winch.

    Out before dawn, back for breakfast

    Trolling gear aboard, a local skipper for the offshore days.

    Amberjack and dentex in the Adriatic, tuna off Sardinia, dogtooth and wahoo in the Maldives. Whatever is landed goes to the galley; the rest goes back.

    The last hour of light, close in along a coast the yacht cannot reach.

    Sea kayaks are carried on every yacht in the fleet. In the Bay of Kotor and the Mljet lakes they are the best way to see the place at all.

    Arranged in every base port we work from. Deep tissue, sports and lymphatic, plus prenatal by request. Two therapists on the larger yachts so couples do not have to take turns.

    Flat water, mats out, and the whole bay to yourselves for an hour.

    An instructor joins the yacht for the mornings you want. Vinyasa, hatha and restorative; on catamarans the foredeck nets take a class of eight comfortably.

    Twenty minutes, before anybody else is up, with the engines off.

    Led by the same instructors who run the yoga programme. It is a small thing and it changes the shape of the day.

    A full week built around recovering

    Short passages, early nights, a nutritionist-led menu and a therapist aboard throughout.

    We plan the route so the yacht moves in the morning and sits still from noon. Alcohol optional, screens discouraged, and the tender available at any hour.

    The aft deck cleared, one table, and the yacht turned to face west.

    The crew will move the yacht at anchor so the table faces the sunset, which sounds like a small thing and is the detail guests mention most often afterwards.

    Tell one person. Nobody else on board will know until it happens.

    We have arranged these on a sandbank, in a sea cave, and once at 06:00 on a foredeck off Es Vedrà. Photographer optional and discreet. Champagne is not optional.

    Possible on a Maldivian sandbank, on Espalmador, and on several of the Elaphiti islets. Permissions vary and are arranged for you.

    We keep itineraries on file. A surprising number of guests want the same week again.

    Same anchorages, same restaurants, usually the same yacht — and the crew brief themselves on what you liked last time before you arrive.

    Seabob, paddleboards, wakeboard, towable, e-foil on the larger yachts.

    The bosun runs it as a programme rather than a cupboard: a rotation through the morning so eight people are not waiting on one board.

    Written by the crew, run by tender, and taken extremely seriously by everyone under twelve.

    Clues hidden ashore and aboard, a chart to plot, and a prize the chef has been keeping in the freezer. Ages six to fourteen, roughly.

    The itinerary most families end up with: nothing over three hours under way, and a beach or a town within tender range each afternoon.
