AURÉLIA began in 2014 with Chef Aurélien Marchand and a conviction that fine dining need not be cold or ceremonious — that it could be warm, daring and deeply human. He left a celebrated Parisian kitchen, gathered a brigade of dreamers, and opened the doors to a room designed to disappear so the food could sing.
More than a decade later, that idea endures in every plate. We change our menu with the seasons, build relationships with the growers who feed us, and treat every guest as we would an old friend arriving for dinner.
